Cinco de Mayo
Trisha and I joined our friends for a Cinco de Mayo lunch, and I completely forgot to take pictures! We hadn’t eaten breakfast too long before lunch, so we decided to share a small vegetarian meal, with a side of bean dip and a tall glass of water to drink.
Tastes Like a Cupcake!
This is the second time I’ve made this oatmeal, and both times I’ve been reminded of cupcakes. It is sweet, simple, and… good!
In the Mix:
- 1/2 cup dried oats
- 1/2 cup water
- 1/2 cup milk (next time I will try using Almond Milk)
- 1/2 banana
- 1/4 cup cottage cheese
- 1/4 banana nut muffin (from Whole Foods)
- 1 tbsp chia seeds
- Puffins Honey Rice Cereal
- Almond Butter
Healthier Than It Looks
While I was waiting for Trisha to get home, my stomach started beckoning for it’s dinner. I subsided my desire with a large orange.
When Trisha got home, she actually informed me that she had eaten at the mall not too long ago. Cue the oven!
Dinner tonight was made hastily and thoughtlessly, but that does not mean it wasn’t good. Quite the contrary! When I sat down to eat, Trisha asked if she could have a small portion of my meal. I was 100% ok with that, seeing as the meal I had portioned for myself was too large for myself. Oh, and that’s not pasta below the fish, that’s spaghetti squash! All-in-all this dinner was a win-win. Although, I am currently finding myself with a killer sweet tooth…
The Scale is Off
Today’s lunch was quick and simple. When Trisha came home from the studio, she immediately seasoned some tuna and made herself a sandwich. I wasn’t hungry while she was making lunch, so I asked her to put some of the tuna on the side for later.
… and I am glad she did! I couldn’t tell you what all went into the tuna salad, but I can breakdown the sandwich; that was my creation.
From Top to Bottom:
- Dijon Mustard
- Cheddar Cheese
- Onion
- Tomato
- Lettuce
- Tuna
On the side, I ate eight almonds, a small kiwi, and two(!) tall glasses of water.
While plating today’s lunch, I felt like I was dealing with a ton of small ingredients. After I finished, I only wished I put a quarter next to the sandwich; the scale is really off in these images. I felt like a bird eating everything on my plate, but (amazingly) I was full by the time I was finished. I couldn’t even finish the last bite of my sandwich!
A Fresh Start…
After last night’s poor performance on the health front, I thought it’d be best to start the morning off on the right foot. I battled myself over what I should eat for breakfast, and settled on a Strawberry Dough Boy Smoothie with Puffins sprinkled on top. If this looks similar to something I had before, you’d be right; its the only breakfast smoothie I know how to make!
In the Mix:
- 1/2 cup oats
- 1/2 cup Almond Milk
- 1/4 cup vanilla yogurt
- 1 1/2 tsp chia seeds
- 1/2 frozen banana
- 3 strawberries (halved)
- Sprinkle cinnamon, nutmeg, and vanilla
Toppings:
- Puffins Honey Rice Cereal
- Puffin Puffs, Crunchy Cocoa
- Almond Butter
Normally I am not a fan of chocolate and strawberries (or any fruit for that matter), but this may have just changed my mind. I did wait too long to actually start eating, so the cereal got a little soggy (Trisha certainly would not approve). These kinds of foods are so new to me, and every time I make them I need to psyche myself up just to taste them. But once I do, I want more! Today’s lunch will be a late one – I have an event to go to, and then an extra help session with a professor.
Bad Vision
It’s true – my vision is terrible. I’ve been going to the optometrist since I was in the third grade, and my vision has been steadily declining -0.25 with each visit. I had an early appointment with a new optometrist here in Savannah, and he found the same to be true. Today I graduated to -4.0 lenses! Before we left, Trisha grabbed the other half of the muffin we used for oatmeal the other day, and the last mocha frappe from the fridge for us to share on the road.
After the disappointing appointment (Why won’t my eyes stabilize?) Trisha and I were starving! It was about lunchtime, so Trisha suggested a quick meal at the Atlanta Bead Company before we headed home – I was all too easy to convince.
We both got a “You Pick Two” with a signature sandwich. I settled on some kind of Asian salmon sandwich with a cesar salad on the side, and Trisha got a chicken pesto sandwich with chili.
I couldn’t say either of us enjoyed today’s lunch; the salad was over dressed, and the sandwich was bland and soggy. Trisha shared same sentiments towards her own lunch, and expressed her disappointment accordingly.
She even asked me to take a picture of her lunch for the blog!
